Three Crosses American Whiskey is a blend of whiskeys from bourbon mash made in-house and that of carefully selected bourbons. We distill our whiskey ‘low and slow’ then begin aging it in new, charred American oak barrels. We then blend our recipe with these carefully selected bourbons and solera age the blend, the same way that many of the world’s finest ports, sherries, and rums are aged. Whiskey in the bottom barrels of the ‘solera stack’ are partially harvested, proofed, and bottled. From there, younger whiskey from second tier barrels is cascaded down into the lower barrels and mixed with the older spirit to continue the aging process. Barrels on the top tier are topped off with new make whiskey to begin aging anew. The solera aging method allows us not only to blend across barrels but also by ages of whiskey. We believe this process lends to a remarkably smooth whiskey that is usually only found in much older bourbons and whiskeys.
